Does aubergine = Eggplant?
Or Zuchinni?
Either veggie would taste good with your recipe I think.

Isn't Feta cheese crumbly?
Have only purchased crumbly Feta.
Have never purchased or noticed for sale sliiced Feta.
Though IMHO Provel slices would tasted good with your recipe also.
