I like Pepridge Farm's whole-grain bread. And fresh loaves of bread from the bakery are nice as well (buttered ciabatta bread/roll).

You can substitute finely chopped lettuce for the above recipe. I like to add a few splashes of hot sauce...and sometimes a bit of vinegar to the filling along with mayo. Gives it a slight tartness and that extra kick.
