I did this a few weeks ago and it turned out pretty good:
I marinated chicken in lemon juice and black pepper for about an hour or so...thats all the time I had.
I took about a 1.5 cups of flour and added one spoon of salt, one spoon of black pepper and 2 spoons of Italian seasoning.
I coated each piece of chicken in the flour and fried until each side was reddish brown and then I baked the entire pan in the oven at 350 for 20-25 minutes.
It turned out well.
