My Desi spicy pasta salad:

fry an onion with 6 cloves of crushed garlic (in oil). Add salt, red chilli powder,some chopped fresh green chilli, a bit of fresh corriander, garam masala,crushed corriander seeds, a bit of cumin and bassar (if you like) and mix well. Add a tin of tomatoes and bring to the boil. Leave to simmer for 5/10 minutes and voila sauce is done.

Mix the sauce in while the pasta is hot as the flavour is enhanced (in my humble opinion). Now here's a little twist: add any of the following to the pasta:

black olives
pickled chillies (very desi-ish)
crumbled feta-lovely texture
small chunks of mild cheddar cheese
fresh sliced red onion (soaked in lemon water to reduce bitterness)
fresh salad onions (sliced)
fresh peppers (in a range of colours-if you like very nice funky texture and lovely freshness)
fresh chunks of tomato

I don't add more than 3 of the above as I don't like too much going on.

This salad is served cold, so you can prepare it a day beforehand and leave it in the fridge.

Just before serving, add the juice of half a lemon (or a full lemon if you like a tang) to the pasta.
