I put masala on it in the morning and put it in the fridge and fry it in the evening. Or I will put masala on it , freeze it . Whenever I wish to make chargha ,I take it out 24 hours before frying and put it in the fridge to defrost and then fry it after it is defrosted. Never deep fry a frozen chicken. It will keep on bleeding and will burn from the top and will still be uncooked from inside. I tried it once but it was a disaster .
