my hubby got a truckload of baingan yesterday, and only after chopping it up did i realise that it was twice the amount we needed! so i cooked up half of it, and now i am wondering how to store the other half...
any ideas? its raw and cut....will it keep in the fridge for 2-3 days? i dont know whetehr i shud freeze it? or shud i boil it, mash it and freeze it?
