Quick Coconut Burfi

Few days back when i was looking for sugar cookies recipe i found this one accidentally. It was easy and quick so i gave it a try. I have changed the recipe to make it less sugary and less time consuming for the prep work. I took these burfis to a party and they were a big hit.

So, here's the recipe:

Ingredients:

3 cups sweetened flaked coconut
3/4 can condensed milk
few teaspoons of almonds, pistachios and ground cardamom

Method:

Mix all the ingredients and microwave them for 3 minutes. Let the mixture cool down for an hour in the freezer. Cut pieces and serve. You can reduce or increase the amount of condensed milk according to your liking. Enjoy!

    I forgot to add that all the pistachios, almonds etc should be grinded.

    Is there a way to edit blog posts or comments? just wondering.

    I love coconut barfi...but i have never tried it myself...
    this sounds so easy....thanks for sharing...
    btw....is it like a frozen desert..??will it melt if kept at room temp for a few hrs...??..

    Thanks Ira, Nimko and Angel.

    Chipy, you can leave it outside for few hours...freezing it helps with the setting and binding process. I prefer to leave it in the fridge when its not in use (also to keep it away from zaayan because he loves sweet stuff)

    Wow! microwave! my kind of cooking. there was a time i was baking cakes in the microwave! insane I know. they turned hard by the next day tho. i,m planning 2 get supplies for this 2day. havent had any king of mithai in ages. thnx
