In all the resumes and CVs I've received, I've only ever seen University ranking mentioned once, and I remember this because at the time, I thought of it as tacky bragging.
My thoughts on this are that unless we're talking about a foreign University which isn't going to be known to the person reading the resume, there's no need for mentioning the ranking.
However, if ranking were to be mentioned, it should be referenced at least with the source and year e.g. : "(source: Forbes 2009 Worldwide University Rankings)"
