the egg yolk breaks free in the frying pan. I like my eggs over easy - white and yellow separate. But it pisses the eggs out of me when the yolk runs off. How do I avoid this mentally torturing act of nature?

The simple solution: marry a woman who can fry an egg without breaking the yolk free.

OR whilst its frying try and get the oil over the yolk so it cooks a little and is harder to burst

Yolk runs off as soon as I break the egg in the pan. If it lands intact, then it doesn't break.

I don't know funguy, but i'm a little doubtful that you don't know how to make an egg but you cook all the other stuff that you post in Home economics forum.
Anyhow, the key is low-moderate heat, with enough oil that you can use with the spatula to sorta splash it, gently, over ontop of the egg. That way the egg yolk will be cooked to a paler yellow and from the bottom the heat would've already cooked it. And you do this until it's half done, and a little longer if you want it fully done.

Xara, I think you have a point (as unnatural as it may sound). I am a bit scared of splashing hot oil onto myself. Maybe I should break the egg when the oil is cold and then turn on the stove.

tap the egg with a spoon lightly
a little crack should appear, open it gently just above the oiland the heat should be just low.
dont turn it on after putting the egg in otherwise ull be there forever

Sehar, I know it sounds very unnatural but it happens to me a lot. I also end up breaking tiny egg shells into the pan and it's a pain in the butt to get them out.

Heat the oil on low heat for a couple of minutes, gently break the egg and place it in the frying pan. Not throw it in the pan cuz you are afraid of cheentay
Okay so the problem is that you don't know how to break the egg before you put it in the frying pan? Take the egg, GENTLY crack the center of it against the counter, or use the knife to tap into the shell, until you form a little crack, enough to get some liquid out. Then don't break into the egg, rather pull the two sides apart at the crack.

Xara, tap it with chamcha?. No way man. I usually tap it on the circumference of the frying pan itself. Am I going too hard on the egg by cracking it against heavy metal?

hmm .... maybe break the egg first in a bowl and then transfer it into the pan ..... just my opinion ....
