Unday Ka Halva

Ingredients instructions

12 eggs
1cup sugar
seeds of 4-5 small illaichi
1 cup ghee (not oil)
dry fruits (pistachio,almond,raisins)
Mix all into a pot and cook over a low flame stirring
constantly till the mixture is light brown and dry.
Put onto a plate and flatten into a 1" layer.
After it cools down cut into small peices.

Boiled Unda

Omelete

Cakes (Unda as the main ingredient)

Unday ka salan (which is basically adding Unda instead of veg)

Unday Chawaal (which is basically fried eggs with rice and some vegs)

A drink which i have heard of but never tried and that is ...

boil a cup of milk and throw in a raw egg ... then drink ... probably the egg cooks in the hot milk ..

thats all i can think of now .. will be back if i think of more...

Egg Recipes

Zucchini Sprout Omelet
(Serves 2)

4 eggs, or substitute
2 celery tops, chopped fine
5 parsley sprigs, chopped fine
1 cup mung bean sprouts, chopped
1 small zucchini, sliced and then chopped
1/4 cup milk, or substitute
1/4 cup parmesan cheese
1 tbsp. butter
1 small onion, minced
1/4 tsp. onion powder
1/4 tsp. garlic powder
1/2 tsp. fruit sugar
1/2 tsp. sweet basil
1/8 tsp. sea salt

Heat a skillet to medium heat and add butter. Stir in the celery tops, parsley, zucchini, onion, and sprouts. Cook until the vegetables are tender. Put the eggs in a medium-sized bowl and beat in the parmesan cheese, milk, onion and garlic powder, fruit sugar, sweet basil and salt. Pour over the vegetables in the skillet. Cover and cook over low heat until eggs are set.

Egg Health Muffins
(serves 2)

2 whole-wheat English muffins
2 free-range eggs
2 slices fat-free cheese slices
4 slices turkey bacon or tofu sausage slices
2 tsp. butter

Split and lightly toast the English Muffins. Butter the muffin slices and cover each with cheese. Return to toaster if using toaster oven and brown to melt cheese. Transfer to a plate.

Fry the bacon until they are done and place on one muffin half.

Turn up the heat under pan to high. Add the beaten egg and quickly scramble omelet-style to form a compact round shape. Turn out onto second muffin half. Close the sandwich and serve.



Deviled Eggs


6 free-range eggs, hard-cooked
1 tbsp. light mayonnaise
1 tbsp. light sour cream
3/4 tsp. prepared mustard
1 tsp. green relish
1/8 tsp. onion powder
1/4 teaspoon sea salt, optional
1/8 teaspoon pepper

Cut eggs in half lengthwise. Remove yolks and set whites aside. Mash yolks with fork. Stir in remaining ingredients until well blended. Refill whites, using about 1 tablespoon yolk mixture for each egg half. Chill to blend flavors.




Breakfast Pizza
(serves 2)

2 whole-wheat English muffins
2 tsp. olive oil
2 slices turkey bacon, cut into small pieces
2 tbsp. onion, diced
4 tbsp. pizza sauce from the jar
2 tbsp. green pepper, diced
3 free-range eggs
1/2 cup low-fat mozzarella cheese, grated

Preheat oven to 425°F. Place olive oil in sauté pan over medium heat. Add onion, green pepper and turkey bacon pieces and fry for a few minutes. Add eggs and lightly scramble.

Split and toast the English Muffins. Spread 1 tbsp. of pizza sauce on each muffin half. Spoon the scrambled egg mixture evenly on each half. Top with mozzarella cheese. Bake for 10 - 12 minutes until cheese is melted.

TRY them at home and let me know whether they are worth making 4 guests if they are bad i will make them 4 unwanted guests

Ammi makes the best Unday ka halwa. It is my absolute favorite.
