Ok so I buy carrots all the time and then don't know what to do with it ... well except eating it raw.
Anyone know of a yummy carrot recipe? ... plz post. Thanks a bunch

Carrots can be added to many dishes....You can use them in mixed vegetable dish and also cook them with spaghetti and chinese vegetable rice. You can make yummy desserts like Gajar ka halwa and carrot cake too. Lemme know if you want any recipe.
PS.
I don't have a carrot cake recipe..sorry!

we daily use carrots to make fresh juice (mixed with apple)
but well, cA is right ...u can use carrots in many ways.....n i do have a carrot cake recipe .....but not much time right now .....do let me know if u r interested n i'll post it later

Oh you can make
1. CARROT (GAJAR and METHI) and eat it with Roti. Yummy.
2. Carrot w/aloo.
3. Carrot salad.yummy( made with tomtato sause,vinger, salt and green peper).
PS: CARROT IS ROOT VEGETABLE AND HARD TO DIGEST IF EAT RAW AND IN FORM OF JUICE.

curruptAngel: thanks. I was more after recipes that feature carrots prominently and can be eaten with a roti or taken to work for lunch.
Afia: Yes please ... do post your carrot cake recipe when u get a chance. Carrot+apple juice is an excellent idea ... except mere pass juicer nahi hai ... u see mein student hoon aur mera kitchen minimally equipped hai. Quick n' easy will do me good
Sajal: carrot smoothie ... interesting, I've never tried that. how do you make it?
ILOVEMYBABY: :Salute: You got it babe! ... a recipe for carrot methi and carrot aloo is exactly the type of stuff I'm looking for. I already make yummy carrot salad with shredded carrots, raisens, almonds, cilantro etc..

One glass orange juice
one carrot peeled and cut into 2-3 pieces.
couple strawberries
half or less lime/lemon
1 table spoon honey
Blend the carrots with other fruits in a smoothie maker
with some juice. Add the rest of the orange juice afterwards and blend again. Do let
me know how it turns out for u.

Oh I just read that u don't have a juicer. Well u would
need a smoothie maker for the above recipe.

carrot methi
cut small round pcs of carrot like 2cup.
1 small tomato.
half bunch of fresh methi/4-5 tbs if using dried methi.
2 tbs sugar.
1 tsp salt, red chilli pepper.
1/4 cup of yougart.
pre heat oil in pan. add tomato , salt, zeera, chilli peper and make paste. Mix yougart,sugar, methi make paste. Now add it to pan.Add carrots in it and fry them for 5 min . Leave it on low heat to cook for 20min or till they are soft. enjoy!

and how about gajraila (carrot kheer)..since its summer time..something sweet and cold would be really nice...just follow your normal kheer recipe with added carrots.

there you go ....
INgredients:
carrots 3 cups (grated)
flour 2 cups
sugar 1.5 cup
eggs 3
baking powder 1 Tbsp.
corn oil 1 cup
Method:
sift flour n baking powder together
wash n grate carrots
heat oven (180 C/350 F)
cream oil n sugar together .....add eggs one at a time n beat
gradually add flour with eggs too .....
now mix carrots in it
pour in greased baking pan .....it will take almost an hour to bake
when baked let it cool a bit n then cut slices
my hubby isn't a fan of cakes/biscuits but this is the cake he likes

I love carrot cake, especially with the cream cheese frosting. Cinnamon and pureed canned pinapples (after they have been drained), also make the cake taste wonderful.

How do you make the cream cheese icing that goes with carrot cake? it's the best part of the cake.
