Ingredients:
6 boneless and skinless chicken
3/4 cup plain breadcrumbs
3/4 cup Parmesan cheese
1 egg, beaten
2 cups of tomato sauce
6 thinly-sliced fresh mozzarella cheese
olive oil, salt and pepper
1. While pre-heating the broiler, season chicken with salt and pepper. Dip each chicken in beaten egg.
2. Combine breadcrumbs and Parmesan cheese in a bowl. Coat each side of the chicken cutlet with breadcrumb mixture.
3. In a skillet, cook the chicken cutlets until the breadcrumbs turns golden brown with hot olive oil over medium heat. Two minutes on each side.
4. Spread tomato sauce onto the bottom of a baking dish. Place nicely toasted chicken cutlets on top of the sauce. Top each with mozzarella.
5. For about ten minutes, broil until mozzarella slices are slightly browned in spots. Chicken is cooked when it's white inside.
