hi..
i wwas goign through all the recipes.. and
Mahru urs are the best ones..no offence.. but this is the style of taste..which suites me...
i need recipe for kheer..and laal aloo (red potatoes)
i duno not too mny ppl knw about laal aloo.. it has alot of tmato puree in it..
pls if u can..

Baby pcg, I can tell you about kheer.
take 1/2 gallon milk in a pot, add elaichi, and bring it to boil.
Soak 1/2 cup riceatleast 1 hour before the milk starts boiling.
Drain the water and add the rice to that boiling milk.
Let the rice cook, keep stiring it like every 5 mins or so.
When the rice are fully cooked, mash them with a potato masher in the milk.
Microwave 4 cups of half and half milk to boiling.
Add it to the half and half as needed, meaning if you see 3 cups is giving you the consistency you like then don't add the 4th cup.
Let it cook, keep stiring constantly.
After 10 mins or so add a full can of carnation (sweetened condense milk)
Keep stiring it. Check the sugar. If you think you need more sugar, add 2 or 3 tablespoons and check again. Make sure whatever amount of sugar you add, let it cook for 10-15 mins so that the water doesn't comes out of kheer.
Turn it in the serving bowl, garnish with almonds and pistachios.
Oh if you have a slow cooker (crock pot) then you can transfer the mixture to it before adding half and half.
Once you add half and half let it cook for 30-45 mins atleast before you add carnation or any sugar.

if u use rice powder (or blended, crushed rice), i think that would make you firni not kheer.

we blend/grate the rice in the blender instead of putting in whole rice. Just a suggestion.

Hello Pyaricgudia, thank you for liking my recipes. I agree with Ira, if you are going to use rice powder you will get firni. In Kheer, the rice is much more coarse.
Here is my recipe:
Put one gallon of 2% milk in a pan on medium/'high heat. Add eliachis and chopped badams to the milk. Bring it to a boil and add 1 cup of soaked rice to the milk. Let it boil boil boil till the milk has reduced to half. The rice should be partially done at this point. Now add sugar according to taste. I usually only had 1/2 cup since i am not very big on too sweet tasting kheer. Now, add one can of evaporated milk to the liquid. Continue stirring till the rice is completely done and make sure the kheer is not sticking to the bottom of the pan. Once it is all cooked, i take a hand blender to blend everything for a few seconds. Delicious kheer is ready. Enjoy!

OH shoot, i gave away my secret kheer recipe thinking it was the one and only, original PCG. Chalo, barri pcg ne khaiee ya choti ne aik hi baat hai
