We have close to two dozen tomatoes at home which we bought by accident. And I am afraid a few more days and they will go bad, so what can we make out of them, other than freezing some of them for later (which I hate doing).

blend them and feeze them into cubes
make salsa
make catchup
make bhindi with fresh tomatoes
make chiken karahi with fresh tomatoes yum yum
make pasta sauce
make onion tomato salad for your daal chawal
slice the tomatoes, sprinkle salt and eat them yum yum
put them in your raita

and if still you have some left, fedex them to me

no dont

cut in half lengthways(i dont really know what thatmeans in tomato terms...but what i mean is through the middle so they sit well in a dish)

put in an oven dish

and spinkle with salt, pepper, dried oregano, dried thyme, dried basil(or any of these if you have) and some worcester sauce if you have or light vinegar..OR balsamic vinegar and olive oil and garlic

put in the oven

you can then freeze them and mix with pasta and other roast veg, top with mozzarella

Or you can do the same without the balsamic, add some red pepper and roast

this can be liquidised and water added to make soup or a pasta sauce(you can portion and put in the freezer

or roast with a little ground cumin, coriander powder, pepper, and otehr curry spices of your choice and onion

and place lamb chops on top

or

chop into 6 pieces... srinlke with salt and put in the oven one a low setting (gas one) for hours and hours till they dry out

place them in olive oil infused with garlic and basil

I peel, puree and freeze them for later use. Taste fine in salans.

One thing that i love using tomatoes is slicing them, add some oil in a pan, add teh slices, sprinkle with salt and pepper and cook on both sides. I am not a big fan of raw tomatoes but if cooked like this, I love them!
