I'm not much of a fish eater, but I've made this a few times and not only have I enjoyed it, but it's gotten rave reviews from others. It's very simple and easy to make.
I use Tilapia filets for this. Thought it works well with salmon too. I'm not sure about other types of fish.
Defrost and rinse the filets.
Prepare a marinade with olive oil, yogurt, a bit of lemon juice, crushed tomatoes, a bit of garlic and ginger, and whatever herbs and spices you would like (i add the usual salt, pepper, chili powder, and some oregano and rosemary). The marinade looks sort of gross, but it's delicious. It's should be a liquidy gooeey consistency. For 2-3 filets, the marinade should be about 3/4-1 cup.
Cover the bottom of the baking dish with a bit more olive oil and a light layer of the marinade. Place the fish on top of this layer, and then pour almost all of the marinade over the fish. There should be a pretty thick layer of the marinade over the fish and on the pan. I also like to place some rings of raw onion and fresh tomato over the fish for extra flavor.
You do not need to let it sit in the marinade. You can bake it immediately, at 375-400 degrees. I usually use my toaster oven for smaller meals and it cooks well in there, tho the large over works fine for larger meals.
Check it periodically. When the fish seems to look a bit drier, poor the rest of the marinade over it. Keep the fish moist. The cooking time is about 30-45 minutes, depending on the size of the fish.
I also like to quickly stir fry some veggies with this (zucchini, tomatoes, bell peppers, and onions, usually) and serve with rice.

Sounds great. I usually just use olive oil, lemon juice, salt and pepper or lemon pepper. Will definitley give the crushed tomatoes a go.

We bake tilapia with lemon juice, salt and pepper all the time. Usually eat it with boiled spinach or some other green veg.

i usually add fresh dill to my fish, along with the lemon juice, salt, pepper, and butter. the dill makes it taste good...it also looks good and smells gr8 as well.
