Marinate and grill them. Use a salad dressing type marinade. Make some pilaf rice and vegies with them. Yum !

olive oil, salt, black pepper and lemon are my most preferred marinate for fish. U don;t even have to really marrinate it just dip the fish in it and bake. Someone yesterday mentioned adding crushed tomatoes to the mixture which sounds good.

Marinate the fish in whatever takes your fancy, and then grill it.
Or make mixture out of breadcrumbs, grated cheese, salt, pepper, thyme and parsley and a splosh of olive oil. Press the mixture onto the topmost side of the fillet and then bake in the oven untill the fish is cooked and the topping is golden brown.
Serve the fish with some steamed new potatoes and a simple salad.

What is the topmost side? the white bit? How long do I bake it for? Is it a type of fish that will turn into mush if cooked for too long? Do you think I could do a sauce with it? Is Sea Bass normally served with sauce?
More questions later...

I hate cleaning fish, therefore I prefer buying one of those battered fish pack from the store.
The slanting side is the top most side, the flat one is the base.

The topmost side the the side on the top ie the side that isn't face down on the baking tray.
Bake it for about 15 - 20 minutes in a medium to hot oven but its hard to be precise as it depends on the thickness of the fillet and on your oven etc etc.
Sea bass is quite a firm fleshed fish so it won't turn to a wobbly goo if you overcook it, it will just be as tough as old boots instead.
You could try a sauce with it, like hollandaise sauce but you could just buy that ready made to save the washing up.
