Here is a rough recipe of Dum walay kabab my father makes...
Dont know the right proportion he just adds the things in and doesnt know himself how much, but makes the best kabab.
Qeema 1/2 kilo about
Onion small 1 bareek kata hooa
Ginger, about 1 tbsp
salt
red chillie
Mix them all and make seekh kabab shapes.
in a chopper, chop 1 large onion + Large tomato + few cloves of garlic + ginger. Chop them roughly, dont make a thin paste. Add chillie and salt.
Put the chopped masala in a pan, lay the kababs on top of them, add oil .. cover and cook until done.. Dont stir them at all, otherwise they'll break. hold the degchee from sides and shake it so that it doesnt stick to the bottom of the pan.
When the kababs are cooked. Bhoonafy the masala well.
add loads of fresh corriender, green chillie.
