Ingredients:

Fresh Pumpkin...peeled/seeded, cut in small pieces...1kg

Garlic cloves...peeled...8

1 large Carrot...peeled and cut in small pieces

Fresh White Baguette (Brown if u prefer)...cut half of it into plain chunks with no crust...the other half into discs

250g of thinly sliced Gruyere

Few pieces of chopped Parsley

Ground Black Pepper

Salt

Method:

Boil 900ml of water

Add chopped Pumpkin and Carrot with 1 TBSP of Salt...add the Garlic...simmer for about half an hour/until it's soft like puree

Add the crustless bread crumbs and simmer for about 4 minutes

Then, remove from heat...liquidize in a blender/strain thru a sieve...pour in big, round bowls

Add the Parsley and season with Pepper/Salt

Next, toast the Baguette discs, sprinkle some Olive oil on them...and top them with slices of Gruyere...melt under grill for few seconds only...then u can put them on top of each soup cup serving

Nice recipe, i know someone who actually surved a soup in a pumpkin, it looked so amazing!

In pakistan, I guess they make halwa out of this kadu(pumpkin), it is called kadu ka halwa...
