Ingredients:
1\2 kg semolina (suji), fine1\2 kg sugar350 grams ghee1 cup Phool mukhana1\4 cup kamarkuss1\2 cup char gonday1 cup ghee for frying1\2 cup char magaz (melon seeds)250 grams almond, blanched roughly chopped250 grams cashew nut, roughly chopped1\2 cup saunf ( aniseed)8 - cardamom seeds1 teaspoon cardamom, ground green
How to Cook:
1. Heat 1 cup ghee in a frying pan until hot, add phool mukhana and stirring frequently fry for few minutes or until they pop (Don't over fry ). Remove from ghee and put it in a bowl. Reheat the ghee and fry kamarkus and char gonday for few minutes separately.
2. In a food processor or chopper grind the fried phool mukhana, kamarkus and char ghonday separately.
3. Heat ghee in a heavy based pan and add cardamom seeds. Stirring all the time, fry these for few minutes and then add the suji and stirring all the time fry on medium heat for 10 to15 minutes until it is light brown in color and ghee leaves the side of the pan.
4. Add the sugar and all other ingredients including the fried ingredients. Mix well and stirring frequently cook for 5 minutes. Remove from heat and leave to cool completely. Store in an air tight container.
Serve with hot milk.

What I need to know, is it okay to eat panjiri during pregnancy? or one should start eating it after baby is born?
Poeple used to tell me "panjiri khanay se taankon pe zor parta hai", as I had a few stitches. Because its taseer is garam.
Is it right?

I havent heard of anyone eating it during the pregnancy. My mom has made it for plenty of ladies after have delivered though.

Huh??

Panjeeri seems very simply a high calorie high protein food that helps women lactating women get loads of healthy calories..it is desi old world Ensure...and i see the benefit for women in countries where protein was scarce etc...

taankon per zor?? you mean your stitches are strained..naa unless you're gaining tons of weight from it.

My mom made this for me after my first daughter was born. It was sooo good. She browned the semolina in lots of butter, added sugar, chopped pistachios, almonds, walnuts, laachi, saunf. She kept stirring all of this on med head until it's nice and brown and smells good. Then put it in a glass jar with airtight lid. I took a few jars of it back home with me and would cook it up in some water and milk.

Well, my MIL didnt make me panjiri after my son was born because she said that its taseer is garam, so I should avoid having it. If my mother was alive she would have made this for me. However, it was a normal delivery. And everyone I tlaked to used to tell me to start having it, as its good for the mother. After going through the delivery, she has to regain the energy. All the ingredients when combined are good for your health and your bones.

I agree, its high protein and high calorie diet. In a sense I am happy that she didnt make it for me because I already gained a lot of weight during pregnancy.

My mom made me panjeeri for me after my delivery. Actually, I ate it throughout pregnancy as well. It's really nutritious because of all the nuts in it. Nuts are high in vitamins, calcium and protein and that's good for the mother. Think about the old days. People didn't have meat everyday because it was hard to afford. There was no such thing as formula, so a woman was constantly breastfeeding (you lose a LOT of calories and nutrients while breastfeeding and some women become very thin because of it). This was a good, high-caloric food item for new mothers.

Dont eat it while you're pregnant!! panjeeri has a lot of 'heat' in it, what with all the nuts and ghee.. you dont want to be going in to labour earlier than necessary

My mom makes it for the ladies who've had babies and some of my cousins
She would save me a ziplock bag full too since I used to love eating it. Now I don't care for it too much but don't mind having it once in a while. My sasu ji sent it for me from Pak and told me to eat it as it will give me a lot of energy
You bascially fry all the nuts you can get your hands on - mainly almonds, pistachios, raisins, coconut, these round white balls with brown dots on them (don't remember the name) and this other thing called "gond" which look like small crystal brown rocks. Then you bhoonify the suji and add the nuts mixture to it and bhoonify some more. Don't turn into suji ka halwa though. The mixture at the end is not supposed to be very thick

a punjabi friend of mine's mom is a nutritionist..she says panjeeri is FANTASTIC to eat...especially after the baby is born.


nuts and ghee? I have NEVER heard of nuts brining on pre-term labor...it's actually recommended for the nutrients..especially DHA which is fantastic for baby brain development.

Ghee is just butter-....high fat..not sure if it's good or bad.

amelie....i agree that its a highly nutritious diet but its best to eat after the birth n not before. I've heard (n experienced) that too much of nuts are blamed for pre term labour. I can't say how authentic it is but my experience somewhat proves it right.

My Mil made this for me with samolina (suji) ghee n nuts etc. Ammi makes almost same stuff with besan too but its not called panjeeri...we just call it besan ki mithaai.
