I've noticed that my salan has a sweetness to it even though I've added all the masala and salt etc. How can I get rid of that sweet taste?

make sure you are buying regular yellow onions and not the sweet onions. Also too many onions can bring on a sweet taste in salans.

use red onions for salans, the white ones work great in non-desi dishes and salads because they are sweeter.
