ingredient:
2 1/2 cups flour
3/4 cup butter
3/4 cups granulated raw sugar
1 pinch salt
1 tsp baking powder
2 eggs (whites and yolks beaten separately)
1/4 cup cold water
1/2 cup dessicated coconut
few drops almond/vanilla essence
halved slivered almonds for decorating the cookies
instructions:
in a mixing bowl, mix all the dry ingredients.
add together eggs, butter, essence and water in another.
gradually fold in the dry ingredients into the liquid ingredients.
knead the ingredients together until you form a firm dough.
turn on the oven to 350 degree.
in a non stick baking dish, spoon cookie dough discs (1 inch thick and 1 inch in diameter) 2 inches apart.
in the center of the discs, with a fork make a criss cross pattern on the dough.
press down a few slivers of almonds on the top on each cookie.
bake for 30 minutes untile golden brown.
remove and cool on a rack.
serve with tea.
yield: 2 dozen cookies
note: store in an air tight jar. these cookies can be refrigerated.
