Use boneless chicken, add the meat cut in smaller cubes to a pan, a wee bit of oil, the chicken should releases enough liquid for it to get cooked well. Add some salt and chinese salt and cook it till its done. once done either shred it with your hands or add it to a blender and run it a couple of times. Put it back in the pan add finely chopped cabbage, black pepper, some crushed red pepper, soy sauce. and cook the mixture till the cabbage is no longer hard. Once you see the cabbage softening a bit add chopped scallion and remove the mixture from the heat before the cabbage looks overcooked and withered. It should have a nice fresh green colour to it and look tender.
Use the thin rice paper sheets that you can get from any grocery store for the rolls. Once the mixture has cooled down prepare you rolls and deep fry.

I thought spring rolls were vegetarian and egg rolls have meat, like chicken, or minced meat.

look what i managed to do
so once you get that envelope looking shape just keep rolling to the end of it. Make sure when you put in the filling and make that first flip the filling should be snug and tight, don't stuff the rolls sparingly. Keep it tight as you roll.

ok so another mixture that i tried and it came out pretty good.
cook teh chicken with salt, chinese salt, black pepper and soy sauce. shred it in ur chopper, run on pulse 2-3 times. add fresh chopped spinach leaves, chopped leeks, feta cheese and seasoning, i use only salt and pepper and drizzle some more soy sauce. it was really good.
