Step 1:
First of all fry one and a half onion in canola cooking oil. Try to stir it constantly, if you run back to GS to read TLK's assesment of yourself a second time some of ur onions can get overfried and you'll end up with something like this, a few dark brown ones in a lot of barely golden ones (please excuse my chamcha in the middle of everything)
Advanced Level Step 1:
Now you're really going to have to stir constantly cos you don;t want your over done onions to turn into koila while the undercooked ones catch up, so keep working that chamcha to at least try to get them evenly brown
Ulta Advanced Level Step 1:
Now remove half the fried onion and put them aside for later. Add masalas as specified in the image. Your degcha might look a little ganja like TLK's head but no worries, we'll fill it up again, (the same hope cannot be made for tlk's head though)
Step 2:
Now add that darned chicken. Yes that is the piece that Knockout artist freaked out on thinking it was an extra leg. I have done the same once that is why I know
Step 3:
Mix your chicken and masala on high flame till the outside of your chicken is white (yaani andar se kachi bahar se pakki) about 5-6 mins or so while stirring it.
Step4:
Now add about a cup of tomato sauce or then blend one large tomato if you don;t have sauce. I prefer the tomato cos the sauce makes the saalan red and I like whitish saalans but I didn;t have the time to blend the tomato so I used sauce. Cook for another 5-6 mins
Step 5:
Add a cup of yoghurt and cook it some more.
Step 6:
The yoghurt will make it quite liquidy like this.
Step 7:
Continue to cook till the yoghurt starts drying up. once the masala is a little thick sprinkle some garam masala powder and add back the fried onions u took out in the start
Step8:
Remove from the heat, mix up the fried onions and garam masala in the chicken and leave covered for a few mins. As for all that oil thats apeared on top, before anyone sees it scoop it out with a deep spoon and discard in your sink.
Step 9:
Enjoy my saalan with mattar walay boiled rice

what did you say? the serving is too small? Worry not, aagay dekho
Step 10A and b:
I had some of this roti with some of this saalan too
