Uetian2k1, here is how i make my gurr walay chawal.

Rice 1.5 cups
Gurr 1 cups or more depending on how sweet it is
Water 3 cups
saunf, a tsp or so
salt, 1 tsp
oil about 1/8 cup or so
a few cardamom pods

Boil gurr in water till it has melted. Taste this water to make sure it tastes sweet enough for the amount of rice. Different brands of gurr can have different amounts of sweetness in it. Take off the heat and pour it in another container slowly so that you see some sand settling at the bottom. Drain that off. My MIL taught me to do it this way because the sand is so fine, you cant really use a sieve on it unless you use a malmal cloth.

Heat the oil in a pan and add cardamom pods, stir until they sputter. Add the gurr water and heat until boiling. Now add the salt and saunf to it. Add the presoaked rice and leave on medium heat until the water has almost evaporated. Then cover and put on dam until the rice is done.

You may realise you need to make it a couple of times to get it right, the oil adn the gurr etc. I can finally make it the way i think is perfect, after trying 2-3 times.

smn6549, it doesnt matter what shape the gur is, it will dissolve itself in the hot water.

my MIL left a lot of gurrrr at my place but I hid it!!! I didn't know how to make gur wale chawal and if my hubby had ever found out we have "desi" gur lying in the kitchen he would have asked me to make something out of it!!!

I dun like gur walay chawal so that gurr is going back to my mil sooner or later.

I have nightmares for the word, zarda... well there are two things I can never master.. biryani and zarda!!

chipsy..for you the point is dun ever make gur wale chawal for me!!!!

sorry i am late for posting the recipe and Ira did, anyway my way is little differant , Here is it.
rice 2cups soaked in water for 15 min
Gur almost 1 1/2 cup
oil 1/2 cup
soonf 2 tbs
nuts ,raisins
4,5 caradamom and few long
First u have to make sheera with gur and water, add very little like 1/2 cup water to gur and cook until all gur dissolve, i tooo follow the same thing as Ira said that there is sand at the bottom so carefullly pour it into another pot leaving the sheera at the end of the bottom.
Then boil rice like u boil for biryani (aik kani rekh ker) and drain all the water.
Now in another pot heat oil add the caradamom pods when they crackle add soonf and nuts and raisins ,then add the rice and the gur sheera.u can add little milk like 1/4 cup to it tooo, and lemon juice .First cook it for 5 min on high flame then put it on dum for 15 min. Stir once in between. They will be ready.
I dont make gur wal;ai chawal so often , but first time i made it for a hubby ,s freind on his request and then 2,3 times more.
As snm6457 said some people add boil channa dall to it too, when u add the rice and all stufff.

I love gur walay chawal too but dont know how to make it. I tried Zarda with Rahat's recipe and believe me it turned out so well.

My mother is an expert making gur walay chawal but i didnt learn from her. I will surely try the recipe by Ira and Aaish and let you know how it was. The only diff is that we boil the rice like we do for Zarda and add the gur sheera in it.
