ok sine i got the subject of defrosting out of the wya
i was wondering..is ti ok to freeze certain things like onions and tomatoes and dhania? u know...like i dont use all of it at one time, and i dont want it to spoil b the nxt time i use it... it won't go bad right if i freeze it?

dhaniya you can freeze....in fact you can chop them up and fill ice cube trays with it. Whenever you need to use it you can take out a cube of dhaniya...however many you need.
I am not sure about the tomatoes and onions....i would think not.

^ I love that idea for dhaniya!!
tomatoes definitely won't work, and I doubt onions will either. For onions, you can fry a bunch at once, drain the oil and store the fried onions for a while.

I prefer fresh dhaniya as you cant beat the smell and fresh colour of it... however for emergencies i tend to store/freeze sum coriander (chopped up) and i hav to admit it loses its colors but its not bad to hav it as a back-up.

you CAN'T store coriender in the freezer...it loses ALL its freshness Unless you sundried it before freezing which is almost impossible to do in cold parts of USA.
you can freeze tomatoes but don't ever try to freeze raw onions unless you want to spoil your freezer..it's going to smell like onions too.  Just get prefied onions or fry some yourself.

These days you even purchase frozen crushed garlic, crushed ginger, various herbs - dhaniya, poodhina, etc and also onions...
I hav to say from personal experience dat frozen chopped coriander tastes far better than freeze-dried or dried coriander.

I think you can even chop tomatoes and freeze them in small sections like 1-2 chop tomatoes in 1 small ziplog.
and yeah you can certainly blend tomatoe and onion in a paste and freeze them in the ice cube tray.
You can also freeze the chopped danyia, you necessarly don't have to blend it in paste thingy.

Ooh...
well i use garlic thats already crushed, it comes in diff forms (crushed, large cut or chopped) in a tiny jar.. and i already mashed one adrak and keep it in a jar, so those are handy.
i love having fresh dhania to sprinkle over foods but i found they spoil really quickly. tomatoes as well... any other way tomake em last longer ?

Sara with the tomatoes.. best way to keep them to stay longer is to keep them in some sort of tupperware, upside down (stemside) away from all sorts of sunlight (on a countertop or something is your best bet).. You could try squirting with a bit of lemon juice too, I think the acidity should keep the bacteria from multiplying.
Never ever keep tomatoes in the fridge!
Oh and I see you asked about onions as well... just keep em in a dark place in a basket ...

Guys....of course fresh is always best....smells better and looks better.
Dhaniya however spoils quickly unless you use it everyday in every dish. I doubt most of us do that. So the best alternative to fresh would be to freeze it so that you have it in case you need it right away. I dont know about you guys but I hate to run to the store to get stuff at the last minute...especially on the same day you plan on using the ingredients you bought.

I've read that somewhere as well. do you know why?
I would think that it would last longer if you kept it in the fridge.
sara....as far as garlic. I only use fresh garlic cloves. If you keep them in the fridge they'll last a while. when you are ready to use it just throw em in the mini processor and chop it up. Smells better in the food and is much tastier then using the already crushed garlic you find in jars....IMO.

They get mealy and lose flavor.
Garlic is another thing you're really just supposed to keep stored in a dark place not the fridge... but you mentioned it tastes good so I guess its not that bad to do that.
