a great, super easy, yummy way of making sure the fam gets their veggies

what you need:
1 eggplant, chopped into 1/2" squares
2 zucchini, sliced - not too thinly
2 bell peppers, sliced - not too thinly
1 large onion, sliced - not too thinly
2 cups mushrooms, sliced
2 large tomatoes, sliced - not too thinly
2.5 tbsps olive oil
salt to taste
2 cups finely shredded parmesan
3 whole cloves garlic, finely chopped up

method:
1. heat 1.5 tbsp olive oil in a pot over medium heat, sautee garlic
2. add eggplant and salt and cook for about 10-15 minutes until eggplant softens up
3. in a fairly deep casserole dish, spread the eggplant over the bottom
4. start layering the veggies one on top of the other, making sure to sprinkle a bit of salt and a layer of parmesan between each veggie layer... so eggplant, cheese, zucchini, salt/cheese, mushrooms, salt/cheese, tomatoes, salt/cheese, onions, salt/cheese, bell pepper, salt/cheese, and keep going till all the veggies are used up. finish off with a sprinkling of parmesan
5. bake in a 350 degree F oven for 45 minutes

et voila! yummy veggies and a perfect sidedish to steak or chicken or qeema or really, anything you want.

oh by the way any subsitute for egg plant that would taste good with zucchini. My bro doesn't eats eggplant...*sighs*

anything would work i think, lusi... how about squash or pumpkin? you could use the meatier portobello mushrooms too.

well this batch finished... but imagine a vegetable lasagna with sliced veggies, no pasta and wayyy less cheese

Thanks for that great recipe...sounds easy and quick enough...but would we need to also put little olive oil in between layers? Do the veggies get taste without any oil?
