A neighbor asked me to cook zarda for her daughter's ameen ceremony tomororw. I cooked 3 cups of it... but now before putting it on damm it looks a little too soft and soggy... either I put too much oil or it soaked up too much water?... can it be saved?! HOW?
someone plz reply fast

I dont think so, me fink its the water that has done it. All i can suggest is you add more rice and cream, if still the end result is the same, you'll have no choice but to start over.

if you're making it for somebody else and the event seems to be really important, then I wouldn't try saving it, I would try to start over again because you wanna try and prepare it in the best way possible.

Leave it on dum for 10-15 mins on low heat (like on the 1st or 2nd lowest of the low so hopefully not too many rice will get crispt from the bottom or stick to the bottom of the pan). Make sure you don't remove the cover during the dum time.

Use a newspaper or any other paper for dum..it soaks up water. If the paper gets soggy too soon change it so that it can absorb more moisture.
After it is done spread the rice in a wide/open kinda dish without cover.

oh wow, I guess lusi and masi know some major cooking secrets, I gotta remember them cuz one time my biryani got soggy like that, had no idea what to do  .

It wasnt soggy and wet anymore, but the chawaal were all stuck together and really heavy tasting. I guess it was the oil
