2 lb bhindi - washed, dried, chopped and lightly fried
1/4 cup olive oil
1 tsp salt
2 tsp red chili powder
1 tsp hot spice mix
3 medium lemons - sliced
1 tsp ginger and garlic paste
1 cup Tamarind water
4 garden tomatoes
1/2 tsp kalonji
few stems of coriander
2 medium red onions - finely chopped
lightly fry chopped okra in a shallow fry pan. remove.
fry onions in rest of the oil.
add in ginger and garlic paste and chopped tomatoes.
add back in fried okra. an add tamarind water.
lid the pan and steam for 10 minutes on medium heat.
add in spices an lemon juice.
lid again for another 10 minutes.
okra will have absorbed all the moisture and will look cooked and shrunk.
lid again for another 10 minutes.
remove in a corning ware serving pot.
garnish with coriander leaves.
& serve hot with pita bread or boiled rice.
