My cousin and I are organizing a pool party at her house this weekend... we got the decorations and chairs and party favors but we're kinda stuck on the menu...
So far we have lemonade, iced tea, bottled water, virgin pina coladas, chips and salsa, popsicles, thai chicken wraps with spicy peanut sauce (rachel ray's recipe), fruit kebabs, salad... what else would go well at a pool party? Suggestions for appetizers, main dishes and dessert really needed...

Make
-3 tier sandwiches, with shredded chicken and cheese filling or eggsalad. But they would have to remain cool outside
-boneless chicken on skewers cooked over a tray of water in the oven, with peppers, onions, cherry tomatoes and mushrooms after each piece of chicken, simple marinade of lemon juice, oil, paprika, black pepper & salt
-hot dogs

watermelons , melons , pineapples ...................u know all juicy things r a must for pool parties

For dessert, get a big tub of ice and put in individual cups of icecream, different flavors.

Thanks for the suggestions nikki... we're definitely thinking of burgers and hawaiian chicken kababs..you know with the pineapple chunks..but I think we'll make two kinds... I like your suggestion.. hotdogs is a good idea... hadn't remembered that... we're already gonna have popsicles and whatnot out so we want something a bit different and special for dessert...
HSAP- yup we got enough mangoes, honeydew, pineapple, watermelon, cantelope and berries for the rest of the summer right now lol

THen make this pineapple pudding type of thing:
2 cans of condensed milk
1, 8 oz tub of sour cream
3 crushed pineapple tins
1 pt. heavy whipping cream
Mix all, bake at 350 until a little goldeny and water evaporates. Some water may not evaporate. Let it be. Then cool and refrigerate. It is yummilicious. Serve chilled.
This is enough for 10 people, so double or triple quantities according your your number of guests.

I found a recipe for ice-cream pie.. what do you think of this? I like yours too but I already have too much pineapple stuff going on in the menu... the fruit, the pina coladas, the hawaiian chicken kababs... see what I mean?
INGREDIENTS
- 1 (9 inch) prepared chocolate cookie crumb crust
- 1 quart vanilla ice cream, softened
- 1 (6.5 ounce) jar macadamia nuts, chopped
- 1 (12 ounce) jar hot fudge topping
- 1/2 cup heavy whipping cream, whipped
directions
- Reserve 1/2 cup of the nuts and stir the remaining nuts into the ice cream. Fill the cookie shell and return to the freezer until firm.
- When ready to serve cover the top with fudge sauce, dollop with whipped cream and sprinkle with reserved 1/2 cup chopped macadamia nuts.

fruit kebabs are the best.
you can also make cold coffee icecream scoop medley melbas with hot peaches or cider apples with the icecreams topped with dark chocolate curls and cookie crumbs.
that will be your perfect desert.

here is a recipe for a dessert i got from kraft foods website

Strawberry Whipped Sensation
4 cups fresh strawberries, divided 1 can (14 oz.) EAGLE BRAND® Sweetened Condensed Milk 1/4 cup lemon juice 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided 8 OREO Chocolate Sandwich Cookies, finely chopped 1 Tbsp. butter, melted
LINE 9x5-inch loaf pan with foil, with ends of foil extending over sides of pan. Mash 2 cups of the strawberries in large bowl. Add condensed milk, juice and 2 cups of the whipped topping; mix well. Pour into prepared pan. MIX chopped cookies and butter. Spoon over whipped topping mixture. Cover with ends of foil and gently press cookie mixture into whipped topping mixture. Freeze 6 hours or until firm. INVERT dessert onto serving plate when ready to serve; remove pan and foil. Spread remaining whipped topping onto top and sides of dessert. Slice remaining 2 cups strawberries; arrange over dessert. Store leftovers in freezer.

Corn on the cob!!!! Yes I knew I was forgetting something!!! Thanks for the reminder. As for fruit kebabs, yes ladies thats definitely already on the menu as I mentioned in the first post  Mano those melon balls are just too cute to be eaten hehe... never heard of a melon baller and its too late to get it now cuz the party is tomorrow evening but Im totally gonna look it up for later days.. thanks!
