For Raima Noreen
Soup
In a big pot add a tad bit of oil and throw in some garlic. Let sizzle add frozen veggies (I stick to sturdier ones such as carrots, corn, peas - these usually come in combination bags). Add about 1-2 cups of tomatoe puree and equal amounts of water. Salt and Balck pepper to taste, some hot sauce to taste. Let soup thicken over medium flame, usually about an hour or so.
Hummus:
Add 1/4 cup olive oil, 2 cans canned chick peas (with half its liquid), one clove fresh garlic, lemon juice to taste -- blend until you get desired texture.
sanwiches:
Start with whole grain bread, spread both slices with pentiful hummus, add sliced round tomatoes, lettuce (or baby spinach leaves) cucumber slices preferably with the peel on for extra crunch.

Nice lunch idea..thanks.
For hummus, instead of the chick peas liquid, I use yoghurt (if sour the better) and also add small white onion while blending.

Aly I I love the ypgurt idea --
I tried the onion bit and didnt like it -- was too pungent of a taste for me.

I am an onion fan myself...while serving, I garnish with spring onions (make sure the greens are there) and sprinkle with paprika.

And I believe one tbs of hummus is about 90 calories so don't add too much ya know.

Dude but its not that fatty, its basically protein.. vs its famous sandwich alternative Mayo... But yeh its dense in calories

The recipe for hummus is incomplete as Tahini (white mustard seed paste) is a must ingredient for hummus.

I dont like tahini...its an acquired (slightly bitter) taste and the hummus tastes great without it.
Oh and to make it a more lighter food, I usually slice veggies and we use hummus as a dip. Nice way to get people to eat veg.
