Microwave-cooked peas rice
1&1/2 cups soaked rice
1 cup green peas
1 chopped and fried onion
2 stems of fresh coriander leaves
2 finely chopped green chilies
3 cup tomato paste
1 tsp salt
2 cups water
1 tbsp olive oil

In a microwave safe bowl, place rice with water. Fry onion with salt and mix in with tomato paste, green chilies and peas. Add into the rice and water in the bowl. Cook in microwave until water is all drained and the color of the rice has turned to that of brown rice (approx 40 minutes). Garnish with fresh coriander leaves.

Cooked cheese peppers
2 cups shimla peppers
1 cup cheese squares
1/2 cup tomato sauce
2 stems of coriander leaves
1 cup tomato sauce
1 chopped onion
1 tbsp garlic and ginger crushed
3/4 cup olive oil

Fry onion in olive oil. Add in all spices. Chop all bell peppers into quarter inch thick strips and add in these bell pepper strips with tomato sauce. Add in cheese squares. Stir without breaking cheese. Now add garlic and ginger paste. Stir and let stand to simmer for 30 minutes. When ready, the consistency will be of a thick soup. Garnish with fresh coriander leaves.


Cooked tomato sauce with kidney beans
3 cups boiled/canned rajmah - red kidney beans
curry spices - 1/2 tsp haldi, 1 tsp red chili powder, 1/4 tsp crushed cumin, 1/4 tsp turmeric, 1/2 tsp coriander (dheniya) powder, 1/2 tsp garem masala & salt
1 cup tomato sauce
1 chopped onion
1 tbsp garlic and ginger crushed
3/4 cup olive oil

Add in all curry vegetables in heated olive oil except tomato sauce. Add in all spices. Add in except dheniya powder. When heated, add in drained kidney beans. Lid for 10- minutes. Now add in tomato paste and dheniya powder. Re-lid and cook for 20 more minutes.

Salad
1 Romanian lettuce
2 Cucumbers
2 Garden tomatoes
1 lemon
1 tsp black pepper

Take these chilled vegetables, and cut the lettuce with hands into coarse pieces. Chop cucumber and garden tomatoes into thin discs. Toss together and squash lemon juice onto the chopped salad vegetables. Sprinkle black pepper.
