It's Mango season and my dad being my dad brought a hundred (read 6) boxes and only he and I eat them. They are pretty soon going to go off.

So, me being the chalako that I am have decided to make a mango cheesecake instead of trying to eat Mango for breakfast, lunch and dinner.

Cant be making lassi and I dont like it and I dont do milkshakes or smoothies either. It must be a cheesecake!

Only trouble is, I havnt a recipe.

Missy, here is a recipe that i found but havent tried yet. Make some changes depending on the reviews if you want to.

Also, if for some reason you cant use all the mangoes yet, try peeling and slicing and freezing them.
