I have decided to make more healthy food and was thinking that sandwiches might be an option

A big fat club sandwich with layers of fruit , cheese , vegetables and meat will contain all four food groups, nothing can beat it in terms of healthy eating.

nice thread.
1] take chicken (boiled & shredded), eggs ( boiled & slightly mashed) and finely chopped cabbage , add some cheese + mayo + salt + black pepper + soya sauce & worchesterchire sauce to it , and mix well . Take 2 white bread slices , apply some butter to it than spread out that mixture and serve it at room temp.
2] take pita bread , cut it into half so that it's pocket pop open , now take only the boiled egg from above recipe , fill it into pocket plus put some baby spinach ( or any lettuce) and serve at room temp.
3] grill or fry some spicy boneless chicken , take white or brown bread slices apply some mayo to the slices , put a slice of boneless chicken + lettuce + tomato + cheese slice + ketchup in between them , toast the sandwich in oven toaster & serve hot
4] take canned tuna fish , first dry the water in the pan + add some drops of oil & black pepper , when it's cold add little mayo to it and make a spread , put it on slices of bread also add some lettuce, toast the bread and serve hot.

p.s : mayo & butter could always be replaced by low-calorie o& non-fat versions , and breads with low-carb ones or better substitutes whatever suits u

are chicken/egg salad sanwiches healthy? If you choose to opt for sandwiches try choosing whole grain bread/whole wheat type wraps. Or even open faced sandwiches.

Try substituting spreads to replace some of the fatty dressings/mayo in a lot of sandwiches. Perhaps use like hummus/pesto/ as a spread and fill with lettuce/tomato/onions/grilled chicken...etc...
you can also make like a thick yogurt sauce as well.

a couple of issues

white bread is bad news
processed meats are high in nitrates and are carcinogen so limit how much you do there.

Sandwich is as healthy as its filling (as X2 pointed out).

I like Pita Pocket sandwiches, open face sandwiches are also healthy as they have less carb.

I am a meat-a-saurus man. The best sandwich is leftover sliced pot-roast (beef that has been boiled with veggies and water for HOURS)
Put the sliced meat on a toasted roll with cheddar cheese, horseradish sauce and (if you wanna get fancy) add some roasted peppers, onions etc.
Tuna is always a big hit, esp when you add chopped onions, chopped lettuce and american or cheddar.
chicken needs slathers of mayo and onion...perhaps some lettuce and cheese too Guess I like cheese lol
As far as bread, there are alternatives...if you like sliced white, there is "WonderKids" which looks and tastes like white bread but its all-grain, minimally processed. Wheat bread is great, as are pitas....the only thing I dont like about Pitas is that I cant stuff enough in there for myself...but for boys and hubby it works out well.

See, you get pocket pitas, and in the pita you can stuff anything. Thisis what hubby likes:

Grill a piece of beef. Slice it up thinly, stiry fry lightly in onions, garlic, ginger, tomatoes, salt, pepper. Mix with shredded lettuce and ranch dressing. Yumm.

Or you can use chicken breasts, feta cheese, lettuce mix, olive oil, etc etc.

Jam sandwiches are the bestest!

But yeh, definately on Brown bread. Actually Granary bread is LUSH and so is Wurburtons Seeded Batch.

I love bread. Sometimes you dont even need a sandwich. Just toast. Or Bread and Jam.

Veggie sandwiches fillings

1. Mash peas, finely chop carrots and boil and mash potatoes. Fry the veggies in little oil for 10 mins or so. Add salt chillie powder touch of sugar and some garam masala. When cooled add chopped coriander and onions.

2. Thinly slice veggies lengthwise eg courgettes tomatoes green pepper aubergines potatoes any combination you can use. Coat in mixture of olive oil salt pepper herbs and grill the veggies. Use as filling nice for baguettes and add olives and finely chopped green chilles (marinated in olive oil) If you like you can cover with cheese and grill till cheese melts
