ingredients
sliced cucumber
boiled small squares of potatoes
finely chopped tomatoes
grated green chillies
1 tsp smoked cumin
olive or canola oil to smoke cumin
1 tsp -salt
1 tsp - red chili powder
plain low fat yogurt
method: heat up a tbsp of oil to make turn cumin into smoked cumin. whisk yogurt with spoon to make it smooth. add in salt, red chili powder and smoked cumin. add in boiled potatoes pieces, chopped tomatoes, grated green chillies & sliced cucumber.
chill raita.
serve with rice or appetizers such as falafel or stewed vegetable kebabs.

^ you'd know.
It'll start to give off the smoked smell.
Dont let it turn black, remove it as soon as you start smelling the cumin.

There is a raita recipe that we make at home sometimes and it's totally yummy and its recipe is similar to what you mentioned above. That's how we make it
Yogurt - as much as you need
Thin yogurt out by adding enough cold water. Keep its thickness to your personal like. Add salt to taste, kala namak 1/2 tsp, 1/2 tsp garlic paste, roasted and ground zeera 1 tsp and one good pinch of red chilli powder and mix everything well. Heat 2 tbsp of oil and add 1/4 tsp each of mustard seeds, whole zeera, a few whole dried red pepper and curry leaves and make a tadka/baghaar. Once they start changing the color and giving off fragrance, throw the whole thing down over the top of yogurt.
It's super delicious!

well there is a raita i've made once
you grate kadu -i don't know the english name as i've never grocery shopped for it  forgive me
you boil the kadu until soft (not to mushy)
you add this to yogurt
add chopped green chillies
add smoked cumin, and chaat masala 1/4 tsp around there don't overpower it.
add salt to taste and its ready! goes great with rice and tikka! i think i got it right!

^^ we always do kaddu... grate the kaddu, steam it till it is all tender...cool it and add it to your yogurt...

yeah probably lauki in urdu i think i used punjabi! its green squash i figured it out.

An authentic Raita (Rai meaning mustard) must have mustard seeds or powder. Here is my favorite one:
Cucumber & Banana Raita
Finely chop bananas and grate cucumber (without skin) and chop green chilles and coriander leaves. In yoghurt mix salt, sugar and mustard powder. Then add the veggies. Tastes excellent with doodhi and roti.
Another raita recipe
Finely chop red onions, tomatoes green chilles, grate carrots and cucumber. Mix yoghurt with salt and red chille powder. Add veggies to yoghurt. Heat some oil and add mustard seed and curry leaves. Soon as seed pop pour the oil mixture (Tarka) over yoghurt and veggies. Tastes great with aloo paratha
