I have a dressing recipe that calls for red wine vinegar not sure if I should go buy a bottle, does it actully have wine in it? Whats the closest subsitute if it does have wine?

hmmm i dont think it has any alcohol in it. Look online and see if you can find any brands without alcohol.

Chemically speaking, there is a difference of an oxygen molecule between wine and vinegar. That is why they tell you to cork the wine bottle so it doesn't get oxidized and hence converted into vinegar. Therefore, red wine vinegar IS made from red wine BUT it's chemical structure is changed by the addition of an oxygen molecule and therefore it is NOT wine anymore. Just vinegar that is made from wine and vinegar doesn't have alcohol.

so if you are cooking with something alcoholic whether or not it evaporates depends on cooking style, how its used..and temperature and duration.

Well, the easiest way to remember is that red wine vinegar is NOT red wine. If you still concerned, then it's the best to substitute it with some other vinegar/product.
