Okie dokie

Whip up some yogurt
Add Ginger and Garlic paste to it
Add the pickle Masala
Laal Mirch
let it marinate for an hour

Fry some diced onions till they become transparant
add coriander seeds and sabut zeera to it and wait till the seeds pop
To that add the marinated liver and yogurt mix.
Fresh diced tomatoes (if you like tomatoes or just tomato paste)
Bhoon it
When the oil seperates add fresh green chillies and sprinkle salt over it.
You dont add Salt before or while cooking cause it makes the kaleji hard. (duno if its the same for chicken one, i only use chicken kaljei for making pakoras)

Squeeze lots and lots of lemon juice on it while eating

I like chicken kaleji just fried in little bit masala, like put 1-2 tb sp oil in frying pan, add ginger/garlic paste (depends how much kaleji is using) fry them then add kaleji put little bit dahi, salt, red chilli powder and ground black pepper upto taste fry till done. It will ready in few min.

It's very rich in iron and great for women and those that are anaemic! I'm a vegetarian but everyone likes the way dadi makes it...

my fav kaleji recipe ............ take kaleji , add lemon juice+ garlic paste +little ginger paste+ crushed black pepper+ little crushed or powdered red pepper + few spoons of oil , marinate for a while (few mins for chicken kaleji & 30 min if it's mutton, beef etc) and than put it in a pan , cook it with top covered till it become tender now add salt, than remove the lid & let the juices dry or cook till it start sticking to the bottom n color turn darker . when done they're almost dried(or little bit sticky) & could be eaten as a snack

p.s: i don't like kaleji in saalan form hence prefer to have it as a snack or side with rest of khaana

A slight correction :

I was talking about Chicken Kaleji (liver), which has healthy ammount of iron and nutriants and is good for women and kids. it does not have dangerous cholestrol

rest mutton and cow liver contains cholestrol apart form iron and other stuff.

I like kaleji very simply fried. Just add some oil to frying pan. Add kaleji & cook till brown. Just sprinkle with salt/pepper while cooking. Just like it as a snack, dont like the salen version as kaleji gets overcooked and rubbery. I do it this way to get extra iron as im anemic. What I like even more is Chicken dil....yummyyyy & sheerdan...not sure what its called in english
