Roast Chicken - Marinate the whole chicken with skin in lemon juice, mashed garlic, soya sauce, salt, pepper, chilli sauce, for about 2 hours at least.
Slide some butter under the skin and smother the top with butter.
Stick in a hot oven and baste from time to time until crispy skin and meat is tender n cooked (at least an hour usually).
Enjoy with some warm crusty bread and hummous.
STEAK - use the same marinade and cook on the griddle pan so its seared on both sides at least, keep it on until its cooked to your liking, the more well done it is, the more likely it is to get tough though!
