We don't eat enough vegetables in my house, so please give me ideas with your tried and trusted recipes.

This week, please post only AUBERGINE recipes, thats right, focus on BAINGAN, BATINGAN, BADJINJAN, BRINJAL, EGGPLANT ONLY in other words!

Can be curried, non-curried, dry, with sauce, anything.

Mmmmmmmmmmmmmmm.......I heart eggplant. YUMMY!

I like eggplant ke pokoray

And I like eggplant ka salan.......especially Bagharay Baingan......which has a pleasant tangy taste to it.

My mom usually makes the regular salan......but I will try to make Bagharay Baingan. Here is a recipe of the internet. Enjoy!

Hey thanks. Yesterday I didn't know what to do with the baingan (bcos no one posted boohoo) so I typed it into Youtube and got some recipe, but it didn't turn out very nice.

If you try the above, if its nice, please tell me. Mr Halwa is a great fan of hyderabadi bhagara bengan but I can't make it properly. He did say it was very nice but I can tell when he's didn't want to let me down after I went to all that effort.

I make this eggplants with raisins...it goes well with boiled rice...
Its always a hit at dinner parties and all....
If you like the taste of sweet and savory mixed together in your salan/curry...let me know I will post the recipe...
btw,I think I have posted it on this forum somewhere before too...

I haven't tried making the recipe yet. But i have eaten Bhagarey Baingain....and they are sooooooooooo good. They're different from the regular baingan ka salan in which the eggplant is mashed to beyond recognition, lol.

This particular eggplant dis is tangy because of the imli and richer becase of the ground nuts that some people add to it. I'll let you know how it turns out when i make it.

^ Hey thanks chips, It looks like a nice easy recipe to make, I will try it on another aubergine day (cos we had one yesterday!). Not sure about the raisins tho, I might leave them out, do you think it will still taste ok?

Hey Halwa,

Since your husband likes eggplant, here's a simple recipe you can try out. It's an eggplant raita. I remember Pakistani actor, Humayoun Saeed, once made this on a cooking show with Marina Khan, I think.

Anyhow....you're basically just frying eggplant slices with spices and then tossing em in yogurt.

^i was about to post the same! baingan raitha is very easy to make. just fry a little zeera, then add baingan slices and sautee, and at the end add a little red mirch powder. add it to a bowl of whipped yoghurt and you've got a great side dish.

another yummy dish is baingan bhartha - dahi vaalay. if you've got a gas stove, then bbq some baingan (not the big ones that have a lot of water content, i like to use holland or italian eggplant). peel off the blackened skin, chop and mash the vegetable. add finely chopped onion. for the garnish: heat a little oil, add chopped green mirch, zeera, 1 tsp urad/mash ki daal, and fry until the dal turns red. pour the tempering onto the baingan-onion mixture. add yoghurt, mix well and serve.

i also make tomatar vaalay baingan bhartha. bbq the eggplant on a gas stove, peel off the blackened skin, and mash the flesh. fry zeera, onion, green chillies, tomatoes and bhuna it well. add ur spices - dhaniya, garam masala, red chili powder. finally add the mashed eggplant and cook a little longer. garnish with freshly chopped green coriander.

another delicious dish is the chinese style eggplant in garlic sauce. chop up the baingan into bite sized pieces, then dunk em into a pot of boiling water for abt 7-8 minutes. the baingan shd be parboiled - not raw and not mushy. take em out and pat dry. heat a little olive oil, add a tsp of minced garlic and fry. then add some sambal oelek, the parboiled baingan, a little soy sauce, salt and a sprinkling of sugar.

i love baingan and i've got lots of baingan recipes, but i think u've got enough ideas in this thread already!

eggplant parmesan
Slice eggplant into 1/4 inch slices, and sprinkle with salt and pu tin strainer with heavy weight to drain out excess water for about 1-2 hours. Then dip eggplant in egg & then italian breadcrumbs (Flavor breadcrumbs with salt/pepper/garlic powder/parmesan cheese etc). Quickly fry & drain slices on tissues. In a baking dish, spread thin layer of marinara sauce, layer egg plant slices...a sprinkle of shredded cheese...and repeat layers ...end with shredded cheese on top. Bake in over for about 15-20 minutes, serve with bread or pasta.

Excellent, lots of lovely recipes, I want to def try them all, raita and bharta sounds very nice, never heard of eggplant parmesan but I think I will like it.

Keep the recipes coming so that anyone can reference them here if they r stuck with what to do with the aubergine sitting in their fridge.

very simple recipe for cooking brinjals.......................................pee l and cut the brinjals in small pieces approx 1 kg before peeling. take a med size onion slice it nicely fry in 2 tbls oil now add 2 tsp vinegar and 4 tbls tomato ketchup ,salt and chillie as per ur taste. add the small pieces of brinjals and cook on light heat until tender.now take 300gms of yougurt mix half tsp of garlic paste green chillie,cirrinder,salt and any thing u like in yougurt such as tomatoe or mint ,or zeera or onion ..................first put the brinjal salan in dish and then pour the raita type yougurt on top of brinjal salan garnish it with corrinder and serve immediately

I love baingan ka bharta.. soo yummy yummy!
I usually get the smaller sized baingan. Preheat the oven to 400 degrees. Leave the stem & skin on the baingan and cut twice from the bottom towards the stem making a + (plus) sign at the bottom, it should become 4 pieces attached to the stem.. after that place in a oven for about 35-40 minutes, turn them over after 15 minutes..
In the meantime, add a tbsp of oil to a pan and add 1 chopped onion to it. Brown it a little and add the tomatoes and cumin powder, salt, red chilli powder, kalonji, 1 bay leaf and mix well, add a little water and let it simmer for a few minutes
After removing the baingan from the oven place a few in the above mixture, cut up the rest and mash it into the mixture. Let it cook on low heat for about 25-30 minutes.
Garnish with green chillies and fresh coriander

enjoy!

extremely fattening though.

baingan raita is delicious.
my mom also makes bengan with any chicken/meat bharta style and thats good too.

I made tomato aubergine bharta today courtesy of Namkeen and Mystical's recipes which I kind of mixed together, and it turned out very nice. Goes very well with plain roti or paratha.

I am trying to post a picture but it won't work!
