Tandoori Chicken
Ingredients:
- 1 cup non-fat plain yogurt
- 1 small onion, minced
- 2 cloves garlic, minced
- 1 1/2 tablespoons lemon juice
- 1 tsp chopped fresh cilantro
- 1/2 tsp paprika
- 1/2 tsp ground cumin
- 1/2 tsp ground turmeric
- 1/2 tsp ground ginger
- 1/2 tsp salt, or to taste
- 1/4 tsp freshly ground pepper
- 1/4 tsp ground cinnamon
- Pinch of ground cloves
- 4 bone-in chicken thighs, skinned and trimmed of fat
Directions:
Stir together yogurt, onion and garlic in a bowl. Add lemon juice, cilantro, paprika, cumin, turmeric, ginger, salt, pepper, cinnamon and cloves. Add chicken and coat well. Cover and marinate in the refrigerator for at least 2 hours or overnight.
Preheat oven to 500 degrees F.
Bake the chicken for 25 mins or until cooked.

Roast Chicken
Ingredients:- Whole chicken
- Salt and ground pepper, to taste
- 2 small, thin skinned lemons, washed well and dried
- 2 to 3 cloves garlic
Method:
Preheat oven to 350.
Wash chicken. Let chciken stand on a slightly tilted plate for about 10 mins so that all the water drains out. Dry all over.
Season chicken inside and out with salt and pepper; rub in the seasonings.
Set the lemons on a counter and roll them back and forth, pressing with your palm. Puncture each lemon in at least 20 places.
Place both lemons and garlic cloves in the cavity. Seal the opening with toothpicks; close, but don't make an airtight job of it because the chicken may burst. Run kitchen string from one leg to the other and tie it at the knuckle ends; the string serves only to keep the thighs from spreading apart and splitting the skin.
Set the chicken, breast down, in a roasting pan. Place it in the upper third of the oven and roast for 30 mins. Carefully turn the chicken over and cook for another 30 to 35 mins.
Turn the oven up to 400 F and cook for additional 20 mins.
Spoon the juices over the chicken and serve.

Here is a desi version of broast.
Chicken drum sticks 1 kg
Vinegar 2 tbsp
Soya Sauce 2 tbsp
chilli suace 2 tbsp
Ginger/garlic paste 2 tbsp
Lal mirch 1 1/2 tbsp
Kali mrich 1 teaspoon
Salt to taste
Mix all this and leave it for 30 mins. Then cook it on high flames till it dries.
Now take 1 cup white floor, half tsp haldi, half tsp baking powder, kali mirch hafl tsp and mix thoroughly with the chicken. Leave it for 10-15 mins.
Then deep fry them.

Back in the 70's and early 80's, foods were far more tastier at most homes. And that was the time when there was no Shan masala and referigerators.
Everything was bought fresh and consumed strightaway.
And then there was a time when we did not have gas. We used to cook on charcoals - from salans to roties!

Really easy recipe for Chicken Broast
Ingredients:
Method:
- Put chicken in large bowl. Add lemon, 1 tsp salt and rub it over chicken pieces. Cover, marinate overnight.
- In a bowl, mix 1\2 teaspoon of salt and rest of the ingredients, except oil. Place coating mixture in a plastic bag. Put a chicken piece one at a time in the bag and shake it to coat the mixture.
- Arrange the coated chicken pieces in a single layer on a baking sheet.
- Deep fry chicken until cooked. Fry to a crisp golden color.
- Remove chicken broast from oil and place on lots of kitchen paper.

Ok, i made mostar95 recipe of chicken broast, and they came out excellent!
p.s. i didn't use soya sauce.
