Salam all. I'm terrible at making omlettes! I went to Pakistan and my cousin made fantastic omlettes, and have tried to make them at home but to no avail. I think she would use chillis and onions and spices. It would be a paratha colour and perfectly round. Does anyone have the recipe to make this? I would really appreciate it. Thanks

edit: Its not a conventional omlette as such.. it was more thinner

Hmmm, u could try my dads recipe.

He lightly fries some onions, green chillies and tomatoes. Adds some red chilli powder, black pepper, salt and sometimes a bit of haldi. Then pour over about 3 or 4 lightly beaten eggs. Put the lid on allow to cook. The base should be kind of dark brown. He sometimes turns them over aswell.

This omelette is more like a fritatta (spanish omelette - its thick).







One must make a mark in this world, if I am remembered for anything, let it be cheese and crackers...

I dont eat eggs.. but Im pretty good at making omelettes (which ppl seem to like). First thing uve to understand is that ideally, ur base in the omelette shudnt be brown or burnt. second, uve to make sure that u hav enuff eggs to give a nice solid base to ur omelette in the skillet. Say uve a 14" skillet, but u use only 2 eggs.. then no matter how u butter/ oil ur skillet, the omelette will not thicken properly cuz the base is too thin, and it wont hold the veges/ cheese/ meat..

so just use a hand whisk, beat a few eggs (3-4). Add salt, black pepper/ or other spices (crushed red chilli.. ) I always put ginger paste and dried oregano (takes away the eggy smell imo). Also splash sum milk. Now pam ur skillet (or use butter or oil) and let it get a little hot. put over the egg mix and let it cook for a bit. After u see that the base has thickened (it shudn't burn/ stick to the bottom), add w/e u wanna add to it. tomatoes/ onions/ cheese/ mushrooms...). Let those cook too for a bit.. and then use a flattened spoon to turn it over half way. It wil make a perfect half circle. and a perfect omelette

This is a basic recipe that I use...

Use spring onions instead of the regular ones, they give a boost to taste. So all you need is

Eggs
Spring onion
fresh green chillies

salt
red chillies (laa mirch)

1. Finely chop spring onions and green chillies.

2. Add salt and red chillies.

3. Mix it well BEFORE adding the eggs. Normally the red chillies clot up if we add them directly to eggs so this is a trick that works well.

4. Add eggs and beat the mixture.

5. Heat oil in frying pan add mixture to the middle of the pan and let it spread to take shape..when done on one side flip and cook the top.


Variation: Sometimes I add shredded mozzarella or cheddar cheese to it. I don't add it in the mixture cos it makes the omelette a bit mushy. Add it when the eggs start to set in the pan..like half done, add cheese on top, let it melt and then flip side.

I think this is the closest recipe. However, should I fry the onions first - they used to be quite soft? How many eggs should I use per serving? Thanks by the way, im feeling nostalgic

Sahds, no you don't have to..green onions get done in seconds. I use one egg per person and you can use one small spring onion per egg...if the onion is large use half of it or as much as you like..there are no hard and fast rules..try a couple of times and you'll know what works best for you

My omelet:

I fry onions, mushroom, bell peppers, tomatoes and even black olives in a pan until they are golden brown.

I whip about 3 or 4 eggs with salt and crushed pepper.

Pour the eggs over the fried veggies, make sure they are evenly distributed before I let the omelet form...halfway through I flip it and then flip back.

I take some cheddar cheese and sprinkle over half the omelet and double the rest of it over so it looks like a half circle...let it sit there until the cheese melts and then take it out. Sprinkle some more cheddar on top.

Serve with salsa and sour cream!

^ Cheese in omelettes is really nice. Can even grill the top. Mmmmm. One of Mr Halwa's specialities - he makes it like yours but uses green chillies instead of bell peppers.

we guys also do the same turns out more lika a bhurji... add in oinions green chillis red saute them a bit... add in the chopped aloos... thora fry kar kay add in the eggs u beat the egs n then add them in or jus pop them in like a scramble and then move them around... so its like what u call a bhurji... this is like a proper meal have it with roti n ur quick lunch is done...

My recipe

couple of eggs
half a small onion
1 green chilli
salt
chilli pdr
coriander (fresh)

whisk the eggs, (more you whisk, the fluffier it will be), finely chop onion, coriander, chilli, add in all dry ingrediants, and mix.

place in hot pan, remove from side to side allowing some wet mixture to spread and cook, flip over and enjoy.
