Well if you add some spinach to Gobi, this gives you an entirely unique taste.

I think gobi is at its best then!!!

This is from cooking with BJ , just add gobi to this recipe and add increase the other ingredients accordingly and you are goo to go.

Aloo Mattar

Ingredients:
1\2 kilogram small potatoes
1 - large onion, skinned and sliced
4 - garlic clove
1 inch piece fresh ginger
1\4 cup oil
1 Pinch asafetida, crushed, opt
1\2 teaspoon cumin seeds, zeera
1 teaspoon salt
1 teaspoon chilli powder
1\4 teaspoon turmeric powder (haldi)
2 - tomatoes, roughly chopped
1 1\2 cups peas
1\4 cup water
1 teaspoon garam masala
2-3 - green chilies, sliced
1\4 cup coriander leaves, chopped

How to Cook:
1. Cook the potatoes until tender. Peel and set aside.
2. In the container of a blender or food processor, mince together the onions, garlic and ginger.
3. In a large heavy-bottomed skillet over medium heat, warm the oil. Add the asafetida (if used) and cumin. When spices darken (1 to 2 seconds) add the minced onion mixture and saut? until browned, about 12 minutes.
4. Add the salt, chili powder, turmeric and tomatoes and cook until they soften about 5 minutes.
5. Add the peas and water; reduce the heat to low, cover and cook for 5 minutes.
6. Halve the cooked potatoes if they seem too large. Add them to the pan and cook covered for another 5 minutes. Mix in the garam masala, green chilies and coriander leaves just before serving.

This recipe serves 6 people.
Preparation Time: 10 minutes.
Cooking Time: 35 minutes.

Here's my way to cook gobi:


Gobi 1 kg
Palak 250 grams

Cut gobi in big pieces and finely chop pakal

Onion - one big finely choped and freid till light brown in oi.


Masala:
Lal mirch 1 half tablespoon
Haldi 1 teaspoon
Garam masala pisa 1 teaspoon

Green bullet chillies 8 (whole)
Ginger: sliced 20 grams

Mix masala with fried onion and oil. Fry it and then add all the other stuff and cook on medium flames till every thing is fully cooked.

You can add yogurt as well for curry.
