This is how I make it, and it is always a HIT!
this recipe makes generous 6 servings:
1L tub of light coolWhip (by Kraft)
1/2 can of evaporated milk (any 12 oz. one)
Sugar to taste
1/2 tsp of Cardamom powder (you can use pods as well, say about 5-6)
2 pieces of bread (I use the front and the back pieces of whole wheat bread)
A handful of both almonds and pistachios
1. Put everything in the blender, and blend.
2. Line a deep dish/bowl with plastic wrap. For better presentation, line the bottom of the plastic covered dish with chopped pistachios. Pour the batter on top.
3. Cover the dish and freeze overnight.
4. Flip the kulfi on a serving platter and...Voila!
