whats the difference between all of these ????

to my knowledge, karahi is masalay daar...more dry...

haandi and salan and curry seem to be the same terms, to describe a general dish.

quorma and nihari have shorba... .

am i mistaken?

payaa is goat feet. nihari is i guess the way its cooked

oh i thought both were the same.
& both were sticky until jafri pointed out tht nihari was not sticky

karahi: dry masala
qorma: curry base is fried crushed fried onions and yogurt.
nihari: a different blend of fragrant spices, thickening agent used, beef shank is the preferred cut here
paye: similar to nihari except that the type of meat used is what determines its consistency (goat feet)
salan: a generic name for a curry based dish
handi: again a generic name for a dish, used for exotic dishes these days to give it a traditional twist
curry: the english term for a gravy based dish

Karahi masala: It is mainly without corriander powder. Some people add methi leaves in it and mostly crushed chilles are used instead of powder: Mine is curshed chillies, tumeric powder, garam masala powder and methi leaves.

Qorma: Haldi is missing from it. The mixture should be chilli powder, dhaniya powder, jaefel jaftri zeera suffed illahi powdered. Whole garam masala including sufeed illachi but missing the lal illachi.

Nihari: Only red chilli powder, zeera powder and saunf powder.

Paya: Chilli powder, dhanyia powder, garam masala powder and haldi. And little bit jaefel jaftri.

Curry or salan: Same as paya except jaefal and jaftri powder.

Qorma: yougurt: in chicken qorma no water, in beef or mutton some water

Nihari: yougurt: water yes

Paya: Nothing: lots of water

Curry or salan: either yougurt or tomatoes. Water yes.
