Has anyone got any tried and tested recipes for Raan (roasted leg of lamb)? Pleaseeeeeeeee.................

Roast Raan
Ingredients :

1.5 kg. leg of lamb
2 tbsp. salt
1/4 cup brown vinegar
oil for deep-frying
PASTE
6 dried plums (Aloo Bukhara)
1 cup yoghurt
2 tbsp lemon juice
1 tbsp green chilly paste
1 tbsp ginger / garlic paste
1 tbsp fresh coriander paste
1/8 tsp yellow food color
1 tbsp red chilly powder
1 egg
TO SPRINKLE
1 tsp salt
1 tsp all spice
1 tsp chat masala



Method:


1-Mix the salt and vinegar and apply all over the leg of lamb.
2- Set aside for 4 hours.
3- In the meantime soak the dried plums in 1/4 cup warm water for 30 minutes and strain.
4- Now mix the plums with all the ingredients listed under "PASTE". Then boil the leg of lamb till it is tender.
5- Apply the paste all over the leg and again leave it to marinate for 2 hours. Heat the oil and deep-fry the leg of lamb for 10 minutes, till it is slightly crisp.
6- Sprinkle all spices and chat masala over it.

Lamb in Yogurt Sauce

Ingredients:
1 whole leg of lamb
GROUP A
2 ounces almonds
8 ounces onion -- chopped
8 cloves garlic
4 inch piece fresh ginger -- in small pieces
4 whole green chile -- chopped
3 tbs plain yogurt of of 1 pint
GROUP B
2 tbs /var/www/hin -- ground
2 ts coriander -- ground
3 ts cayenne
3 1/2 ts salt
GROUP C
1/2 tb whole cloves
16 whole cardamom
1 stick cinnamon
10 whole black peppercorns
DECORATIONS
whole almonds
golden raisins

Serves 8

Method:

In a food processor or blender mix GROUP A

In a bowl stir the pint of yogurt (minus the 3 tablespoons) until creamy n smooth. Then add the Group A paste n Add GROUP B

Now, put this mixture over, around, and in the leg of lamb. Use a glass pan and cover with plastic film. Refrigerate for 24 hours. Glass is used to avoid the possible chemical changes in the yogurt. 24 Hours later: Heat 6 tablespoons of vegetable oil in pan and add (when hot but not smoking) GROUP C A few seconds in hot oil and you pour the spices and hot oil over the lamb. Cover it all with foil and bake at 400F for 1 1/2 hours then uncover for 45 minutes.

Decorate with whole almonds and golden raisins. Then give it a final 5 minutes to finish in the oven. Try a flower with the almonds as petals and raisins for the center. Then arrange two rows of each down the sides.

Basic Lamb Balti

Ingredients:
4 Portions pre-cooked lamb
4 Cloves garlic, chopped
8 oz Onion, chopped
3 t Ghee
4 t Balti masala paste
8 fl Stock
1 t Garam masala
2 t Chopped fresh coriander leaf
Salt to taste
Serves 4

Method:
Heat the ghee in the karahi: stir-fry the garlic very quickly. Add the onion, reduce the heat, and fry until translucent and starting to brown. Add the meat and the Balti masala paste. Turn the heat up and stir-fry for about 5 minutes. Slowly add the stock, and simmer on low heat for about 10 minutes. Then check the meat for tenderness: add stock or water if required. When almost tender enough, add the garam masala and coriander leaves. Salt to taste: simmer for another 15 minutes.

Curried Lamb


Ingredients:
1/3 c dried onion
1/4 c warm water
3 t vegetable oil
2 t ground coriander
1 1/2 t ground /var/www/hin
1 t ground cardamom
1 t ground ginger
1 t turmeric
1/2 t garlic powder
1/4 t pepper
1/8 t ground red pepper
2 lb 1" cubes lamb stew meat
2 c beef stock
1 t salt
1/4 c plain yogurt
1 t fresh lemon juice



Method:
Soak onion in water until soft about 5 minutes. Heat oil in large skillet over medium high heat. Add onion and saute until golden about 4 minutes. Reduce heat to low add spices and stir 1 minute. Add lamb to skillet. Increase heat to medium high and cook stirring frequently until meat is evenly browned 10 to 15 minutes. Add stock and salt. Reduce heat to medium, cover and cook until meat is tender about 20 min. Simmer uncovered until sauce thickens about 20 minutes. Stir in yogurt and lemon juice. Serve immediately over cooked rice
